  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup crushed pineapple, drained
  • 1 cup shredded coconut
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cream the softened unsalted butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time and then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture into the wet ingredients until just combined.
  5. Fold in the crushed pineapple and shredded coconut gently.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bars cool in the dish before preparing the glaze.
  9. For the glaze, mix the powdered sugar with milk and drizzle over the cooled bars.

Notes

Make sure to let the bars cool completely before adding the glaze to ensure it doesn’t melt and run off. These bars can also be made ahead of time for convenience.
