  • ½ cup all-purpose flour (for streusel)
  • ½ cup brown sugar, packed
  • ¼ cup unsalted butter, cold and cut into small pieces
  • 1 teaspoon ground cinnamon (for streusel)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin.
  2. Mix together the flour, sugar, baking powder, salt, and ground cinnamon in a large bowl.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract. Combine with the dry ingredients gently.
  4. For the streusel, mix flour, brown sugar, and cinnamon in a small bowl, then add cold butter and mix until crumbly.
  5. Fill muffin cups and sprinkle streusel on top. Bake for 18-22 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a lighter version, substitute half of the butter with applesauce or Greek yogurt. Use milk alternatives for a dairy-free option.
