Description
A cozy family favorite, Cowboy Butter Chicken combines buttery richness with zesty brightness, creating a flavorful dish that’s easy to prepare.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika (smoked or sweet)
- 1 tablespoon olive oil (for searing)
- ½ cup unsalted butter, softened
- 4 garlic cloves, minced
- 1 teaspoon Dijon mustard
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon fresh parsley, chopped (with extra for garnish)
- 1 teaspoon fresh dill, chopped (optional but recommended)
- Juice of 1 lemon (about 2 tablespoons)
- ½ cup chicken broth (or water for a lighter option)
- ½ cup heavy cream
Instructions
- Pat the chicken breasts dry with paper towels and season both sides with salt, black pepper, and paprika.
- Heat a skillet over medium-high heat, add olive oil, and sear the chicken for 4-5 minutes on each side until golden brown and cooked through.
- Remove the chicken and set aside. In the same skillet, melt butter and add garlic, cooking until fragrant.
- Stir in Dijon mustard, red pepper flakes, parsley, and dill; then add lemon juice, chicken broth, and heavy cream, stirring to create a smooth sauce.
- Return the chicken to the skillet, coat in sauce, cover, and cook for 8-10 minutes to absorb flavors.
- Garnish with parsley and serve hot.
Notes
For a lighter version, substitute heavy cream with half-and-half or a plant-based alternative. Feel free to adjust the spice level by modifying the amount of red pepper flakes.
