Description

A hearty and comforting casserole featuring ground beef, corn, cheese, and crispy tater tots.


Ingredients

  • 1 lb ground beef (or chicken thigh for a leaner option)
  • 1 can (15 oz) corn, drained
  • 2 cups shredded cheese (cheddar, or your favorite type)
  • 1 bag (32 oz) frozen tater tots
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • 1/2 cup milk (dairy or non-dairy)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef for 5-7 minutes, then drain excess fat.
  3. Add the cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper to the beef and mix well.
  4. Spread the beef mixture in a greased baking dish, layer corn, then cheese, and finally arrange tater tots on top.
  5. Bake for 30-35 minutes or until tater tots are golden brown.
  6. Let the casserole rest for a few minutes before serving.

Notes

For a healthier option, substitute ground beef with lean ground turkey and cheese with low-fat options.
