A comforting beef casserole layered with sautéed ground beef, corn, taco seasoning, and topped with flaky biscuit dough and cheese.

- 1 pound ground beef
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup corn (frozen or canned)
- 1 packet taco seasoning
- 1 can (16 ounces) biscuit dough
- 8 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven according to the biscuit dough package instructions.
- In a large skillet over medium heat, brown the ground beef for about 5-7 minutes, breaking it apart as it cooks, and drain excess fat.
- Stir in diced tomatoes, corn, and taco seasoning; cook until heated through, about 3 minutes.
- Spread the biscuit dough evenly across the bottom of a greased baking dish.
- Spoon the beef mixture over the biscuit base, spreading it out evenly.
- Dollop the softened cream cheese over the meat mixture, then sprinkle with mozzarella and cheddar cheeses.
- Bake in the preheated oven according to the biscuit package instructions, or until cheese is melted and bubbly, about 20-25 minutes.
- Allow to cool for a few minutes before slicing and serving.
Notes
Feel free to customize with extra veggies or different cheeses. Can be made in advance and stored in the fridge.
