- 2 boneless, skinless chicken breasts
- 8 oz (about 225g) egg noodles
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 tablespoon olive oil
- 1 cup chicken broth
- ½ cup heavy cream
- Salt and black pepper, to taste
- Optional: Grated parmesan cheese for topping
- Optional: Red pepper flakes for added spice
Instructions
- Season the chicken breasts with salt, pepper, and thyme. Heat olive oil in a skillet and sear chicken for 5-6 minutes per side until cooked through. Remove and slice.
- Cook egg noodles in salted water according to package instructions, reserving ½ cup of pasta water before draining.
- In the same skillet, melt butter, add garlic, and sauté for about 1 minute. Stir in chicken broth and simmer for 3-4 minutes. Add heavy cream and simmer until sauce thickens.
- Toss drained noodles in the sauce, add reserved pasta water if too thick, then mix in the sliced chicken. Adjust seasoning, serve warm, garnished with parsley and parmesan if desired.
Notes
Don’t rush the chicken searing for the best flavor. You can also swap egg noodles for any pasta you prefer, such as spaghetti or fettuccine.
