Ingredients

- 4 cups cooked and shredded chicken (rotisserie chicken works wonderfully!)
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese (plus ½ cup for topping)
- 2 cups mixed vegetables (optional but recommended)
- 1 small onion, finely chopped
- Salt and pepper, to taste
- 1 cup crushed buttery crackers (like Ritz)
- ½ cup melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, and 1 cup of the shredded cheddar cheese. Add the finely chopped onion and season with salt and pepper. If using, fold in the mixed vegetables.
- Grease a 9×13 inch baking dish and pour the chicken mixture into it, spreading it evenly. In a smaller bowl, mix the crushed crackers with the melted butter and remaining cheese. Sprinkle this topping over the chicken mixture.
- Bake in the preheated oven for about 30-35 minutes, until bubbling and the topping is golden brown.
Notes
This casserole can easily be adapted for different dietary needs. Store leftovers in an airtight container for up to 3–4 days or freeze for 2–3 months.
