  • 2 cups fresh spinach (or any leafy greens)
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 4-5 minutes. Stir in the minced garlic and let it cook for another minute until fragrant.
  2. Add the chicken thighs to the pot, season with salt, pepper, thyme, and rosemary. Allow the chicken to brown for about 5-7 minutes on each side.
  3. Once the chicken is browned, add the sliced carrots and broth to the pot. Bring it to a gentle simmer, then cover and let it cook for about 20-25 minutes, or until the chicken is fully cooked and tender. Stir in the fresh spinach and allow it to wilt for a couple of minutes before serving.
