- 1 pound chicken thighs (bone-in or boneless)
- 2 cups chicken broth (or vegetable broth)
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 3 medium carrots, sliced
- 2 cups fresh spinach (or any leafy greens)
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Optional: fresh herbs for garnish
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 4-5 minutes. Stir in the minced garlic and let it cook for another minute until fragrant.
- Add the chicken thighs to the pot, season with salt, pepper, thyme, and rosemary. Allow the chicken to brown for about 5-7 minutes on each side.
- Once the chicken is browned, add the sliced carrots and broth to the pot. Bring it to a gentle simmer, then cover and let it cook for about 20-25 minutes, or until the chicken is fully cooked and tender. Stir in the fresh spinach and allow it to wilt for a couple of minutes before serving.
Notes
For extra flavor, use homemade or low-sodium broth. You can also mix and match seasonal vegetables.
