A comforting pasta dish that captures the essence of chicken pot pie, featuring creamy sauce, tender chicken, and mixed vegetables.
Ingredients
Scale
- 8 oz pasta (like rotini or penne)
- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- ½ cup grated Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions (about 8-10 minutes) until al dente. Drain and set aside.
- In a large skillet, warm up the olive oil over medium heat. Add the cooked chicken and frozen mixed vegetables. Sauté until warm and vibrant.
- Pour in the chicken broth and heavy cream, stirring gently. Add garlic powder, onion powder, thyme, salt, and pepper. Bring to a simmer for about 5 minutes to thicken.
- Add the cooked pasta and Parmesan cheese to the sauce and toss until well combined. Cook for an additional 2 minutes before serving.
Notes
Taste as you go and adjust seasonings as needed. If the sauce becomes too thick, add a splash more broth or cream.
