Description

A comforting pasta dish that captures the essence of chicken pot pie, featuring creamy sauce, tender chicken, and mixed vegetables.

Ingredients

Scale
  • 8 oz pasta (like rotini or penne)
  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • ½ cup grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions (about 8-10 minutes) until al dente. Drain and set aside.
  2. In a large skillet, warm up the olive oil over medium heat. Add the cooked chicken and frozen mixed vegetables. Sauté until warm and vibrant.
  3. Pour in the chicken broth and heavy cream, stirring gently. Add garlic powder, onion powder, thyme, salt, and pepper. Bring to a simmer for about 5 minutes to thicken.
  4. Add the cooked pasta and Parmesan cheese to the sauce and toss until well combined. Cook for an additional 2 minutes before serving.

Notes

Taste as you go and adjust seasonings as needed. If the sauce becomes too thick, add a splash more broth or cream.
