Ingredients

  • 1 ½ pounds skinless, boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter, divided
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 1 (15-ounce) can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread (for serving)
  • Steamed rice (for serving)

Instructions

  1. In a medium bowl, combine the chicken pieces with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Mix well and let marinate for at least 30 minutes.
  2. In a large skillet, heat vegetable oil over medium-high heat. Add the marinated chicken and sauté until golden brown, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, reduce heat to medium, add 2 tablespoons of butter, then sauté garlic and onion until soft, about 3-4 minutes. Pour in tomato sauce, sugar, additional salt, and black pepper. Let simmer for about 10 minutes.
  4. Return the chicken to the skillet, add heavy cream, garam masala, and curry powder. Stir and simmer for an additional 5-10 minutes.
  5. Finish the dish with the remaining tablespoon of butter and adjust seasonings. Serve with rice and naan.

Notes

For a lighter dish, substitute heavy cream with half-and-half or coconut cream. Marinate chicken overnight for more flavor.
