- 1 ½ pounds skinless, boneless chicken thighs, cut into bite-sized chunks
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon sweet paprika
- ½ teaspoon curry powder
- 1 tablespoon Greek yogurt
- 3 tablespoons vegetable oil
- 3 tablespoons butter, divided
- 6 garlic cloves, minced
- 1 medium onion, diced
- 1 (15-ounce) can tomato sauce
- 1 teaspoon sugar
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 2 cups heavy cream
- ½ teaspoon cayenne pepper (optional)
- 1 teaspoon garam masala
- ½ teaspoon curry powder
- ¼ cup freshly chopped parsley (optional, for garnish)
- Naan bread (for serving)
- Steamed rice (for serving)
Instructions
- In a medium bowl, combine the chicken pieces with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Mix well and let marinate for at least 30 minutes.
- In a large skillet, heat vegetable oil over medium-high heat. Add the marinated chicken and sauté until golden brown, about 5-7 minutes. Remove and set aside.
- In the same skillet, reduce heat to medium, add 2 tablespoons of butter, then sauté garlic and onion until soft, about 3-4 minutes. Pour in tomato sauce, sugar, additional salt, and black pepper. Let simmer for about 10 minutes.
- Return the chicken to the skillet, add heavy cream, garam masala, and curry powder. Stir and simmer for an additional 5-10 minutes.
- Finish the dish with the remaining tablespoon of butter and adjust seasonings. Serve with rice and naan.
Notes
For a lighter dish, substitute heavy cream with half-and-half or coconut cream. Marinate chicken overnight for more flavor.
