- 3 cups cooked shredded chicken (about 2 large breasts)
- 1 cup sour cream
- 1 cup cream of chicken soup
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup breadcrumbs or crushed crackers for topping
- 2 tablespoons melted butter (optional)
Instructions
- Preheat your oven to 350°F (175°C). In a large mixing bowl, combine shredded chicken, sour cream, cream of chicken soup, shredded cheese, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
- Grease a 9×13-inch baking dish with butter or non-stick spray. Pour the chicken mixture into the dish and spread it out evenly. Optionally, sprinkle additional cheese on top before adding breadcrumbs. If using breadcrumbs, drizzle melted butter over them.
- Cover the dish with aluminum foil and bake for 25-30 minutes. Remove the foil and bake for an additional 15-20 minutes or until breadcrumbs are golden brown and casserole is bubbly.
Notes
Feel free to use leftover roasted chicken or turkey, and adjust vegetables based on family preferences. This casserole can be prepared ahead of time for convenience.
