- 1 teaspoon dried thyme
- Salt and pepper to taste

Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent, about 3-4 minutes.
- Stir in mixed vegetables and cook for 3-4 minutes until softened. Add shredded chicken and thyme, stirring until combined.
- Pour in chicken broth and bring to a gentle boil. Add orzo and cook until al dente, about 8-10 minutes.
- Lower heat and stir in heavy cream. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
