- 4 fillets cod (thick, white cod fillets)
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons olive oil (for sautéing)
- 1 medium onion (sauté until translucent)
- 2 cloves garlic (minced)
- 1 tablespoon ginger (grated)
- 1 can coconut milk (full-fat preferred)
- 3 tablespoons lemon juice (freshly squeezed)
- 1 teaspoon lemon zest
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent (3-4 minutes). Add minced garlic and grated ginger, cooking for 1-2 minutes until aromatic.
- Add coconut milk, lemon juice, and lemon zest to the skillet. Stir and bring to a gentle simmer, seasoning with salt and pepper. Adjust taste as desired.
- Preheat your oven to 400°F (200°C). Place cod fillets in a greased baking dish and pour the coconut lemon sauce over them. Bake for 15-20 minutes or until the fish flakes easily with a fork.
Notes
For a lighter version, use light coconut milk. Add chili flakes for extra heat or stir in fresh herbs for added flavor.
