Ingredients

- 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon sweet paprika
- ½ teaspoon curry powder
- 1 tablespoon Greek yogurt
- 3 tablespoons vegetable oil
- 3 tablespoons butter, divided
- 6 garlic cloves, minced
- 1 medium onion, diced
- 1 (15-ounce) can tomato sauce
- 1 teaspoon sugar
- ½ teaspoon black pepper
- 2 cups heavy cream
- ½ teaspoon cayenne pepper (optional for heat)
- 1 teaspoon garam masala
- ½ teaspoon curry powder
- ¼ cup freshly chopped parsley (optional, for garnish)
- Naan bread, for serving
- Steamed rice, for serving
Instructions
- Marinate the chicken with salt, garlic powder, sweet paprika, half of the curry powder, and Greek yogurt. Let sit for about 30 minutes.
- Cook the marinated chicken in a skillet with vegetable oil over medium heat until golden brown, about 6-8 minutes. Remove and set aside.
- In the same skillet, melt butter and sauté minced garlic and diced onion until translucent, about 5 minutes. Stir in tomato sauce, sugar, remaining curry powder, black pepper, and optional cayenne. Simmer for 5 minutes.
- Return chicken to the skillet, add heavy cream and garam masala, and simmer for another 10 minutes until the sauce thickens.
- Stir in remaining butter until melted, and adjust seasoning. Garnish with parsley if desired.
- Serve with naan bread and steamed rice.
Notes
For a lighter option, use boneless chicken breasts or coconut milk instead of heavy cream.
