Ingredients

  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter, divided
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 1 (15-ounce) can tomato sauce
  • 1 teaspoon sugar
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread, for serving
  • Steamed rice, for serving

Instructions

  1. Marinate the chicken with salt, garlic powder, sweet paprika, half of the curry powder, and Greek yogurt. Let sit for about 30 minutes.
  2. Cook the marinated chicken in a skillet with vegetable oil over medium heat until golden brown, about 6-8 minutes. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic and diced onion until translucent, about 5 minutes. Stir in tomato sauce, sugar, remaining curry powder, black pepper, and optional cayenne. Simmer for 5 minutes.
  4. Return chicken to the skillet, add heavy cream and garam masala, and simmer for another 10 minutes until the sauce thickens.
  5. Stir in remaining butter until melted, and adjust seasoning. Garnish with parsley if desired.
  6. Serve with naan bread and steamed rice.

Notes

For a lighter option, use boneless chicken breasts or coconut milk instead of heavy cream.
