Description
A quick and flavorful dish featuring shrimp enveloped in a silky garlic butter sauce served over fluffy rice.
Ingredients

- 1 lb large shrimp, peeled and deveined
- Salt and pepper, to taste
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 5 cloves garlic, minced
- 1 tsp paprika
- ½ tsp red pepper flakes (optional)
- ½ cup chicken broth (or vegetable broth)
- 1 cup heavy cream (or lighter cream)
- ½ cup grated Parmesan cheese
- 1 tbsp lemon juice
- 2 tbsp chopped parsley (optional, for garnish)
- 1 cup long-grain white rice
- 2 cups water or chicken broth
- Salt, to taste
- 1 tbsp butter
Instructions
- In a medium saucepan, combine the rice, water or broth, salt, and butter. Bring to a boil, then lower the heat, cover, and simmer for 18-20 minutes. Fluff with a fork when done.
- While the rice cooks, season the shrimp with salt, pepper, and paprika. Heat olive oil in a skillet and sauté the shrimp for 1-2 minutes per side until pink.
- In the same skillet, reduce heat and add butter and garlic. Sauté for 30 seconds, then add broth and simmer. Stir in cream and Parmesan and simmer until thickened. Add lemon juice and return shrimp to skillet, coating in the sauce.
- Serve shrimp over rice, garnished with parsley if desired.
Notes
For a lighter dish, use low-fat cream. You can also swap shrimp for chicken or veggies for a vegetarian option.
