Ingredients

  • 8 oz whole wheat pasta
  • 1 lb lean chicken breast, diced
  • 1 cup Greek yogurt
  • 1 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Bring a pot of salted water to a boil. Cook the whole wheat pasta according to package instructions, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and sauté until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for about a minute until fragrant. Lower the heat and stir in Greek yogurt and parmesan cheese until well combined and creamy.
  4. Toss the cooked pasta and chicken back into the skillet, mixing until heated through and coated in the sauce. Season with salt and pepper to taste. Garnish with fresh parsley if desired. Serve hot.

Notes

Don’t skip the salt in the pasta water for added flavor. Use freshly grated cheese for better melting and taste. Adjust seasoning and creaminess to your preference.
