Ingredients

  • 2 cups of non-alcoholic malt (or apple juice)
  • 1 cup of shredded cheddar cheese
  • 1 cup of heavy cream
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 4 cups of chicken or vegetable broth
  • 2 tablespoons of butter
  • 1 teaspoon of mustard
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onions and minced garlic, sauté until tender and translucent (about 4-5 minutes).
  2. Pour in the non-alcoholic malt (or apple juice) and let it simmer for about 5 minutes. Then stir in the chicken or vegetable broth and mustard, bringing everything to a simmer.
  3. Gradually add the shredded cheddar cheese while stirring until melted. Pour in the heavy cream, season with salt and pepper, and let it simmer for an additional 10 minutes. Serve garnished with fresh chives.

Notes

Use fresh ingredients for better flavor. If you prefer a thinner soup, add more broth. Experiment with different cheeses for varied taste.
