Ingredients
Scale
- 1 lb Steak (Sirloin, flank, or ribeye)
- 8 oz Medium Shell Pasta (Cavatappi, rotini, or penne)
- 2 tbsp Olive Oil
- 1 tbsp Butter
- 1 small Onion, diced
- 3 cloves Garlic, minced
- 1.5 tsp Smoked Paprika
- 1 cup Heavy Cream
- 0.5 cup Beef Broth
- 0.5 cup Grated Parmesan
- Salt & Black Pepper
- Optional Herbs (Fresh parsley or thyme)
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente (8-10 minutes), then drain and reserve 1 cup of the cooking water.
- Heat olive oil in a skillet over medium-high heat, season the steak, and sear for 2-3 minutes on each side. Remove and let rest.
- In the same skillet, reduce heat, add butter, sauté onion for 3-4 minutes, add garlic and smoked paprika, sauté for 1 minute.
- Pour in beef broth, scrape up bits, reduce by half, then add heavy cream and Parmesan. Simmer for 5-7 minutes until thickened.

Notes
Let the steak rest for juicy results and reserve pasta cooking water for sauce consistency.
