- ½ cup (100 grams) Basmati Rice
- 5 cups (1.2L) Whole Milk
- ½ tbsp Ghee
- 6 Cardamom Pods (split)
- ⅓ cup (70 grams) Granulated Sugar
- 7–8 strands Saffron
- Pinch of Salt
- 3 tbsp Pistachios (optional, for garnish)
- 2 tbsp Almonds (optional, for garnish)
Instructions
- Prepare the rice by washing it thoroughly until the water runs clear and draining it.
- Toast the rice and cardamom in ghee over low-medium heat until fragrant.
- Cook the kheer by adding milk, bringing it to a boil, then simmering for 40-50 minutes while stirring regularly.
- Add sugar, saffron, and salt, cooking for another 5-10 minutes to meld flavors.
- Garnish with pistachios and almonds before serving.
Notes
For a dairy-free version, substitute whole milk with coconut or almond milk. Adjust sweetness to taste with sweeteners like maple syrup or honey.
