Description

Ingredients

  • 5 cups (1.2L) Whole Milk
  • ½ tbsp Ghee
  • 6 Cardamom Pods (split)
  • ⅓ cup (70 grams) Granulated Sugar
  • 78 strands Saffron
  • Pinch of Salt
  • 3 tbsp Pistachios (optional, for garnish)
  • 2 tbsp Almonds (optional, for garnish)

Instructions

  1. Prepare the rice by washing it thoroughly until the water runs clear and draining it.
  2. Toast the rice and cardamom in ghee over low-medium heat until fragrant.
  3. Cook the kheer by adding milk, bringing it to a boil, then simmering for 40-50 minutes while stirring regularly.
  4. Add sugar, saffron, and salt, cooking for another 5-10 minutes to meld flavors.
  5. Garnish with pistachios and almonds before serving.

Notes

For a dairy-free version, substitute whole milk with coconut or almond milk. Adjust sweetness to taste with sweeteners like maple syrup or honey.
