- 8 oz spaghetti or fettuccine
- 1 cup ripe tomatoes (diced)
- 1 cup heavy cream
- 4 cloves fresh garlic (minced)
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil (chopped)
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot, add pasta and cook until al dente.
- In a large skillet, heat olive oil and sauté minced garlic until golden.
- Add diced tomatoes, salt, and pepper; simmer for 5 minutes.
- Reduce heat, stir in heavy cream and add reserved pasta water if needed for consistency.
- Toss in cooked pasta until well coated, sprinkle with fresh basil, and serve.
Notes
Feel free to substitute heavy cream with half-and-half or plant-based cream for a lighter option.
