Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
4 cups vegetable broth
2 cups spinach
1 can diced tomatoes (14.5 oz)
1 package tortellini (9 oz)
1 cup heavy cream
Salt and pepper to taste
Parmesan cheese for serving
Instructions
1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sauté 3-4 minutes until softened.
2. Pour in vegetable broth and diced tomatoes. Bring to a simmer.
3. Add tortellini and cook according to package instructions, 5-7 minutes, until tender.
4. Stir in spinach and heavy cream, cooking 2-3 minutes until spinach wilts.
5. Season with salt and pepper.
