Description

Delightful crispy chimichangas filled with seasoned beef, refried beans, and melting cheese, perfect for a cozy weeknight meal.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • ½ cup salsa
  • 1 cup refried beans
  • 1 ½ cups shredded cheddar cheese
  • 6 large flour tortillas (burrito-size)
  • 2 tbsp vegetable oil (for brushing/frying)

Instructions

  1. Cook the beef & onion in a skillet over medium heat until browned and tender. Drain excess grease, then stir in garlic, taco seasoning, and salsa. Simmer for 3-4 minutes.
  2. Assemble each tortilla with refried beans, beef mixture, and cheese. Fold and roll tightly.
  3. Cook by either baking at 400°F for 18-20 minutes or frying in oil until golden and crispy, resting for 2 minutes before serving.

Notes

You can swap the ground beef for ground chicken or turkey for a lighter option. Experiment with different cheeses for varying flavors.
