- 2 pounds Yukon Gold potatoes, diced into bite-sized pieces
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian herbs
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the diced potatoes with olive oil, garlic powder, Italian herbs, salt, and pepper until evenly coated.
- Spread the potatoes on a baking sheet in a single layer and bake for 20-25 minutes, flipping halfway through.
- After baking, sprinkle the grated Parmesan cheese over the potatoes and return them to the oven for an additional 5 minutes until the cheese is melted and golden.
Notes
Use high-starch potatoes for a light, fluffy interior and don’t skimp on the olive oil for maximum crispiness.
