Ingredients

- 6 cups diced potatoes (peeled)
- 1 cup shredded cheddar cheese
- ½ cup cooked and crumbled turkey bacon (or substitute as needed)
- 1 packet ranch seasoning mix
- 4 cups chicken or vegetable broth
- 1 cup heavy cream (or half-and-half)
- Salt and pepper to taste
- Optional: Extra cheese, turkey bacon bits, chopped green onions or chives
Instructions
- Peel and dice the potatoes into even-sized pieces.
- Layer the diced potatoes at the bottom of the crock pot. Sprinkle ranch seasoning over the potatoes, then add shredded cheese and crumbled turkey bacon.
- Pour the broth over the ingredients, ensuring they are covered. Cook on low for 7-8 hours or on high for 4 hours.
- Stir in the heavy cream and season with salt and pepper before serving. Use an immersion blender if desired for a smoother texture, or leave some potato pieces intact for chunkiness.
Notes
You can prep the potatoes the night before. This soup can also be made vegetarian by omitting the bacon and using vegetable broth.
