Instructions
- Prepare the ingredients by peeling and dicing the potatoes into even-sized pieces.
- Layer the diced potatoes in the crock pot and sprinkle the ranch seasoning mix, then add the shredded cheese and crumbled bacon.
- Pour the broth over the ingredients and cook on low for 7-8 hours or high for 4 hours until potatoes are tender; stir in heavy cream and season to taste.
Notes
For a healthier twist, substitute turkey bacon with meat-free bacon and use vegetable broth. This soup can be made vegetarian and even prepped the night before.
