A heartwarming and creamy potato soup made effortlessly in a crock pot, perfect for busy families.

Ingredients

Scale
  • 6 cups diced potatoes (peeled)
  • 1 cup shredded cheddar cheese
  • ½ cup cooked and crumbled turkey bacon (or beef bacon)
  • 1 packet ranch seasoning mix
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by peeling and dicing the potatoes into even-sized pieces.
  2. Layer the diced potatoes in the crock pot and sprinkle the ranch seasoning mix, then add the shredded cheese and crumbled bacon.
  3. Pour the broth over the ingredients and cook on low for 7-8 hours or high for 4 hours until potatoes are tender; stir in heavy cream and season to taste.

Notes

For a healthier twist, substitute turkey bacon with meat-free bacon and use vegetable broth. This soup can be made vegetarian and even prepped the night before.
