- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 2 cups beef broth
- 1 onion, thinly sliced
- 1 teaspoon thyme (fresh or dried)
- 1 cup Swiss cheese, shredded
Instructions
- In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix gently until combined and form into 1-2 inch meatballs.
- In another bowl, whisk together the beef broth, sliced onions, and thyme. Pour this mixture over the meatballs in the Crockpot.
- Cover the Crockpot and cook on low for 6-8 hours or high for 3-4 hours. About 30 minutes before serving, sprinkle shredded Swiss cheese on top and cover to let it melt.
Notes
Use ground turkey or chicken for a lighter version. Fresh herbs can enhance the flavor. Adjust spices to your liking.
