Description

Delicious meatballs cooked slowly in a savory broth with caramelized onions and melted Swiss cheese for a comforting dish.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 cups beef broth
  • 1 onion, thinly sliced
  • 1 teaspoon thyme (fresh or dried)
  • 1 cup Swiss cheese, shredded

Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix gently until combined and form into 1-2 inch meatballs.
  2. In another bowl, whisk together the beef broth, sliced onions, and thyme. Pour this mixture over the meatballs in the Crockpot.
  3. Cover the Crockpot and cook on low for 6-8 hours or high for 3-4 hours. About 30 minutes before serving, sprinkle shredded Swiss cheese on top and cover to let it melt.

Notes

Use ground turkey or chicken for a lighter version. Fresh herbs can enhance the flavor. Adjust spices to your liking.
