Delightful cookies merging classic pecan pie flavors with a soft cookie texture, perfect for any occasion.


Ingredients

  • 1/2 cup butter (softened)
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter
  • 2/3 cup brown sugar
  • 1 1/4 cup chopped pecans
  • 1 tsp vanilla extract
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, cream the softened butter, oil, granulated sugar, and powdered sugar until smooth.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add in the flour, salt, and baking powder, mixing just until combined.
  5. Scoop out 9 equally sized cookie balls and place them on the prepared baking sheet. Gently flatten each ball to about 1 inch in thickness.
  6. Press down the center of each cookie to make room for the pecan pie filling.
  7. Bake in the preheated oven for 8-9 minutes, then cool on the baking sheet for a few minutes before transferring to a wire rack.
  8. In a medium frying pan, melt 5 tbsp of butter over medium heat. Add brown sugar, chopped pecans, vanilla extract, heavy cream, cinnamon, nutmeg, and salt. Stir until combined and heated through (about 3-4 minutes).
  9. Spoon the warm pecan pie filling into the indentations of the cookies.
  10. Cool completely before serving and enjoy!

Notes

Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. Serve warm or at room temperature.
