Ingredients

  • 2 Honeycrisp apples, cored and thinly sliced
  • 4 oz feta cheese, crumbled
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 4 cups mixed greens (arugula, spinach, and baby kale)
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar (or lemon juice)
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Wash mixed greens and allow to dry. Core and thinly slice the Honeycrisp apples, crumbling feta cheese and chopping walnuts if whole.
  2. In a small bowl, whisk together olive oil, apple cider vinegar (or lemon juice), and honey.
  3. In a large bowl, combine mixed greens, sliced apples, crumbled feta, walnuts, and dried cranberries. Drizzle dressing over the salad and toss gently to combine. Season with salt and pepper to taste.
