- 4 boneless skinless chicken breasts
- 1 cup bread crumbs
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- ½ cup all-purpose flour
- 2 large eggs
- ¼ cup milk
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C). Prepare your dredging stations: one with the bread crumbs mixed with half of the Parmesan, Italian seasoning, salt, and pepper; one with beaten eggs and milk; and a third with flour.
- Dredge each chicken breast in flour, then dip into the egg mixture, letting excess drip off, and finally coat in the breadcrumb mixture. Press down to ensure breadcrumbs stick.
- In a large skillet, heat olive oil over medium heat. Sear the chicken for 3-4 minutes on each side until golden brown. Transfer to a baking dish. Mix remaining Parmesan, mozzarella, and garlic, and sprinkle over the chicken. Bake for 20-25 minutes until the chicken is cooked through and cheese is bubbling.
Notes
Let the chicken rest for a few minutes after baking to retain juiciness. For added flavor, squeeze fresh lemon juice before serving.
