- 1 teaspoon baking soda

- ½ cup butter, melted
- 1 cup crushed pineapple, drained
- 2 large eggs

Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In another bowl, mix melted butter, crushed pineapple, eggs, and vanilla extract until combined.
- Pour wet ingredients into dry ingredients and stir until just combined; pour into prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use room temperature eggs for better mixing. Make sure to drain the pineapple well to avoid sogginess.
