Ingredients

  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 cup grated cucumber, excess moisture squeezed out
  • 2 tablespoons fresh dill
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 cup optional vegetables (zucchini, bell pepper, or similar)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly coat a large baking dish with olive oil.
  2. Add the rice and chicken broth to the baking dish, stirring in salt and pepper. Nestle the chicken breasts on top and drizzle with olive oil.
  3. Cover the dish tightly with foil and bake for 25 to 30 minutes, until the rice is tender and the chicken is fully cooked.
  4. While it bakes, combine Greek yogurt, garlic, grated cucumber, dill, lemon juice, oregano, and paprika in a bowl. Stir until smooth and adjust seasoning.
  5. Once baked, let the dish rest briefly. Spoon tzatziki generously over the chicken and rice before serving.

Notes

Allow the chicken to rest before slicing for maximum juiciness. Always remove excess moisture from the cucumber to keep the tzatziki thick and creamy.
