Ingredients
2 lbs beef roast (or chicken thigh roast, or venison roast)
1 cup beef broth (for deglazing)
1 onion, sliced
3 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
1 cup mushrooms, sliced
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 tablespoons olive oil
Salt and pepper to taste
Instructions
1. Slice onion, mince garlic, and chop carrots and celery.
2. Season roast with salt, pepper, thyme, and rosemary; let sit 10 minutes.
3. Heat olive oil in skillet; sear roast 4–5 minutes per side until browned.
4. Remove roast; add onions, garlic, carrots, celery, and mushrooms; cook 5–7 minutes.
5. Pour in beef broth; scrape bottom to deglaze.
6. Return roast; cover and simmer on low ~1 hour, turning halfway, until tender.
7. Remove roast; rest 5–10 minutes before slicing. Serve with veggies.
