  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1/2 cup buttermilk
  • 1 egg
  • 1/2 cup cold butter, chopped into chunks
  • 2 tablespoons sugar
  • Vanilla ice cream (for serving)

Instructions

  1. Prepare the apple filling by peeling and slicing the apples into thin slices.
  2. Cook the apples with lemon zest, juice, sugars, flour, and spices in a skillet for about 20 minutes until fork tender.
  3. Add vanilla to the cooled apple mixture, then transfer to a greased casserole dish.
  4. Preheat the oven to 375°F (190°C).
  5. Mix the dry ingredients for the cobbler topping in a large bowl.
  6. Combine wet ingredients, then mix with the dry until it forms a shaggy dough.
  7. Assemble the cobbler topping over the apple filling, scatter butter on top, and sprinkle sugar.
  8. Bake for 45-55 minutes until golden brown and bubbly.
