- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup enchilada sauce
- 8 small corn or flour tortillas
- 1/2 cup diced onions (optional)
- 1/4 cup chopped cilantro (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine shredded chicken, half of the cheese, onions, cilantro, salt, and pepper. Mix well.
- Take a tortilla and place a few tablespoons of the chicken mixture in the center, then roll it up securely. Repeat with all tortillas.
- Spread enchilada sauce on the bottom of a baking dish and place rolled tortillas seam-side down in the dish.
- Pour remaining enchilada sauce over the tortillas and sprinkle with the rest of the cheese.
- Bake for 25-30 minutes or until the cheese is melted and bubbly.
Notes
Tip: Warm corn tortillas before filling to make them more pliable. Customize your filling by adding black beans or corn for extra heartiness.
