A speedy and satisfying weeknight meal featuring tender chicken, gooey cheese, and zesty enchilada sauce wrapped in warm tortillas.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup enchilada sauce
  • 8 small corn or flour tortillas
  • 1/2 cup diced onions (optional)
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded chicken, half of the cheese, onions, cilantro, salt, and pepper. Mix well.
  3. Take a tortilla and place a few tablespoons of the chicken mixture in the center, then roll it up securely. Repeat with all tortillas.
  4. Spread enchilada sauce on the bottom of a baking dish and place rolled tortillas seam-side down in the dish.
  5. Pour remaining enchilada sauce over the tortillas and sprinkle with the rest of the cheese.
  6. Bake for 25-30 minutes or until the cheese is melted and bubbly.

Notes

Tip: Warm corn tortillas before filling to make them more pliable. Customize your filling by adding black beans or corn for extra heartiness.
