- 4 Flour tortillas (10-inch)
- 2 cups Cooked chicken breast, shredded
- 1½ cups Mexican cheese blend, shredded
- ½ cup Monterey Jack cheese, shredded
- 1 medium Bell pepper, diced
- ½ medium Red onion, finely diced
- 2 tablespoons Olive oil or butter
- 1 teaspoon Chili powder
- ½ teaspoon Cumin
- ½ teaspoon Garlic powder
- Salt and black pepper to taste
Instructions
- Season the shredded chicken with chili powder, cumin, garlic powder, salt, and pepper in a bowl. Mix well.
- Dice the bell pepper and red onion into small, even pieces.
- Heat one tablespoon of oil or butter in a skillet over medium heat. Place a tortilla in the pan, sprinkle cheese on one half, then add seasoned chicken, vegetables, and more cheese. Fold the tortilla and cook for 3 to 4 minutes per side until golden and crispy.
- Let rest briefly before slicing.
Notes
Grate your own cheese for better melting. Allow quesadillas to rest before cutting to keep filling intact.
