Description

Crispy, cheesy chicken quesadillas packed with flavor, perfect for busy weeknights and casual family dinners.


Ingredients

  • 4 Flour tortillas (10-inch)
  • 2 cups Cooked chicken breast, shredded
  • 1½ cups Mexican cheese blend, shredded
  • ½ cup Monterey Jack cheese, shredded
  • 1 medium Bell pepper, diced
  • ½ medium Red onion, finely diced
  • 2 tablespoons Olive oil or butter
  • 1 teaspoon Chili powder
  • ½ teaspoon Cumin
  • ½ teaspoon Garlic powder
  • Salt and black pepper to taste

Instructions

  1. Season the shredded chicken with chili powder, cumin, garlic powder, salt, and pepper in a bowl. Mix well.
  2. Dice the bell pepper and red onion into small, even pieces.
  3. Heat one tablespoon of oil or butter in a skillet over medium heat. Place a tortilla in the pan, sprinkle cheese on one half, then add seasoned chicken, vegetables, and more cheese. Fold the tortilla and cook for 3 to 4 minutes per side until golden and crispy.
  4. Let rest briefly before slicing.

Notes

Grate your own cheese for better melting. Allow quesadillas to rest before cutting to keep filling intact.
