Description

A delightful lasagna-inspired soup that combines rich flavors and creamy textures, perfect for busy weeknights or lazy weekends.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound lean ground beef or ground turkey
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 (24-ounce) jar marinara sauce
  • 4 cups low-sodium chicken broth
  • 1 (15-ounce) can crushed tomatoes
  • 8 lasagna noodles, broken into pieces
  • ½ cup heavy cream
  • ½ cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)
  • Extra Parmesan cheese for topping

Instructions

  1. In a large soup pot, heat the olive oil over medium-high heat. Add the ground meat and cook until browned for about 5–7 minutes. Drain any excess fat.
  2. Add the diced onion and cook until translucent, about 3–4 minutes. Stir in minced garlic and cook for an additional 30 seconds.
  3. Sprinkle in Italian seasoning, red pepper flakes (if using), salt, and black pepper. Pour in marinara sauce, chicken broth, and crushed tomatoes. Mix thoroughly and bring to a gentle boil.
  4. Reduce heat to medium-low and let the soup simmer uncovered for 15–20 minutes.
  5. Add the broken lasagna noodles and cook until tender, about 10–12 minutes, stirring occasionally.
  6. Stir in heavy cream, ricotta, mozzarella, and Parmesan. Allow everything to melt together, adjusting seasoning as needed.
  7. Ladle into bowls and garnish with fresh basil/parsley and extra Parmesan. Serve with garlic bread or a crisp salad.

Notes

Consider making it ahead for a flavorful dinner option. This soup stores well in the refrigerator for up to 3–4 days or can be frozen for up to three months without noodles.
