- 1 (24-ounce) jar marinara sauce
- 4 cups low-sodium chicken broth

- 8 lasagna noodles, broken into pieces
- ½ cup heavy cream
- ½ cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Fresh basil or parsley, chopped (for garnish)
- Extra Parmesan cheese for topping
Instructions
- In a large soup pot, heat the olive oil over medium-high heat. Add the ground meat and cook until browned for about 5–7 minutes. Drain any excess fat.
- Add the diced onion and cook until translucent, about 3–4 minutes. Stir in minced garlic and cook for an additional 30 seconds.
- Sprinkle in Italian seasoning, red pepper flakes (if using), salt, and black pepper. Pour in marinara sauce, chicken broth, and crushed tomatoes. Mix thoroughly and bring to a gentle boil.
- Reduce heat to medium-low and let the soup simmer uncovered for 15–20 minutes.
- Add the broken lasagna noodles and cook until tender, about 10–12 minutes, stirring occasionally.
- Stir in heavy cream, ricotta, mozzarella, and Parmesan. Allow everything to melt together, adjusting seasoning as needed.
- Ladle into bowls and garnish with fresh basil/parsley and extra Parmesan. Serve with garlic bread or a crisp salad.
