A comforting bowl of creamy seafood and shrimp chili that brings joy with every bite, perfect for busy weeknights and family gatherings.

Ingredients

Scale
  • 1 teaspoon olive oil
  • 23 garlic cloves, minced
  • 1 cup chopped onion
  • 2 cups low-sodium chicken broth (or vegetable broth for vegetarian option)
  • 1 can (15.5 oz) Great Northern beans, drained and rinsed
  • 1 can (15.5 oz) black beans, drained and rinsed
  • 1 can (15.5 oz) diced tomatoes with chilis, drained
  • ½ cup whole kernel corn (frozen)
  • 1 cup shredded Colby and Monterey Jack cheese
  • 3 oz cream cheese
  • 5 oz lump crab
  • 5 oz lobster meat (or additional crab)
  • 1 pound shrimp, peeled and deveined
  • Seafood seasoning to taste
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon red cayenne pepper (optional)
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a Dutch oven over medium-high heat. Add the chopped onions and sauté for 3–5 minutes until translucent.
  2. Stir in the minced garlic and cook for 30 seconds to 1 minute until fragrant. Pour in the chicken broth, Great Northern beans, black beans, and diced tomatoes. Stir to combine, then reduce heat to medium-low, cover, and simmer for 15–20 minutes.
  3. Season the crab, lobster, and shrimp with seafood seasoning. Stir in the frozen corn, shredded cheese, cream cheese, and seasoned seafood. Increase heat to medium and cook for 5–6 minutes, until the seafood is cooked through and the chili becomes creamy and smooth.

Notes

Adjust seafood to your liking. For a vegan version, replace cream cheese with a plant-based alternative and load up on vegetables.
