Ingredients
1 (3 to 4 pounds) beef chuck roast
1 tablespoon olive oil
1 onion, chopped
4 cloves garlic, minced
4 carrots, chopped
4 potatoes, chopped
1 cup beef broth
1 packet onion soup mix
Salt and pepper to taste
Instructions
1. Heat olive oil in a skillet over medium-high heat. Brown the chuck roast on all sides until golden, about 4-5 minutes per side.
2. Place the roast in the crock pot.
3. Add chopped onions, garlic, carrots, and potatoes around the roast.
4. Pour beef broth and onion soup mix over everything.
5. Season with salt and pepper.
6. Cover and cook on low for 8 hours, until meat is tender.
7. Remove roast and vegetables. Whisk juices in the crock pot to make gravy if desired.
8. Serve warm with gravy drizzled over roast and veggies.
