Ingredients

1 tablespoon olive oil

1 onion, chopped

2 garlic cloves, minced

4 cups vegetable broth

2 cups kale, chopped

1 cup carrots, diced

1 cup mushrooms, sliced

1 cup broccoli florets

1 cup chickpeas, drained and rinsed

Salt and pepper to taste

Lemon juice (optional)


Instructions

1. Heat olive oil in a large pot over medium heat.

2. Add chopped onion and garlic; sauté until onion is translucent, about 3–4 minutes.

3. Pour in vegetable broth and bring to a boil.

4. Add kale, carrots, mushrooms, and broccoli; reduce heat and simmer 20 minutes.

5. Stir in chickpeas, season with salt and pepper, and cook another 5 minutes.

6. Serve hot with a squeeze of lemon juice if desired.
