Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/4 to 1/3 cup ice water
  • 2 ripe mangoes, pureed
  • 3/4 cup sugar
  • 3 large eggs
  • 1/2 cup fresh lime juice
  • 1/4 cup unsalted butter, melted
  • Whipped cream or fresh fruit for topping

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine flour, powdered sugar, and salt. Cut in chilled butter until resembling coarse crumbs.
  2. Gradually stir in ice water until dough holds together. Wrap and chill for 30 minutes.
  3. Roll out the dough and fit into a tart pan. Prick the bottom and bake for 15-20 minutes until golden brown.
  4. Blend mango puree, sugar, eggs, lime juice, and melted butter until smooth.
  5. Pour mango mixture into the slightly cooled crust and bake for an additional 20-25 minutes until set.
  6. Cool to room temperature, then refrigerate for at least 2 hours. Serve with whipped cream or fresh fruit.

Notes

Using ripe mangoes is key for sweetness. Adjust sweetness based on mango ripeness. For lighter versions, use reduced-fat butter.
