- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1/4 to 1/3 cup ice water
- 2 ripe mangoes, pureed
- 3/4 cup sugar
- 3 large eggs
- 1/2 cup fresh lime juice
- 1/4 cup unsalted butter, melted
- Whipped cream or fresh fruit for topping
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine flour, powdered sugar, and salt. Cut in chilled butter until resembling coarse crumbs.
- Gradually stir in ice water until dough holds together. Wrap and chill for 30 minutes.
- Roll out the dough and fit into a tart pan. Prick the bottom and bake for 15-20 minutes until golden brown.
- Blend mango puree, sugar, eggs, lime juice, and melted butter until smooth.
- Pour mango mixture into the slightly cooled crust and bake for an additional 20-25 minutes until set.
- Cool to room temperature, then refrigerate for at least 2 hours. Serve with whipped cream or fresh fruit.
Notes
Using ripe mangoes is key for sweetness. Adjust sweetness based on mango ripeness. For lighter versions, use reduced-fat butter.
