Ingredients
1.5 lbs boneless, skinless chicken thighs
4 cups chicken broth
1 cup chopped carrots
1 cup chopped celery
1 onion, diced
1 can (10.5 oz) cream of chicken soup
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1 can refrigerated biscuit dough
Instructions
1. Place chicken, broth, carrots, celery, onion, cream of chicken soup, thyme, salt, and pepper in slow cooker. Stir to combine.
2. Cover and cook on low for 6-7 hours until chicken is tender.
3. Shred chicken in the slow cooker with two forks.
4. Cut biscuit dough into quarters and drop into the slow cooker, spreading evenly.
5. Cover and cook on high for 30 minutes until dumplings are fluffy and cooked through.
6. Serve warm and enjoy.
Notes
For deeper flavor, sauté onion, carrots, and celery before adding.
Thicker broth: Stir in cornstarch slurry during last 30 minutes.
Add extra herbs or spices to customize.
Use pre-chopped veggies for convenience.
Variation: Swap chicken thighs with chicken breast or add peas for extra color.
