A hearty and delicious Whole30 Breakfast Casserole featuring vibrant vegetables, fluffy eggs, and flavorful sausage, perfect for a cozy family gathering.

- 1 pound Whole30 approved breakfast sausage (or turkey sausage if not Whole30)
- Olive oil for the pan
- 1 white or yellow onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 cups fresh spinach, chopped (or 16 ounces frozen, thawed and drained)
- ½ teaspoon garlic powder
- 1 teaspoon salt-free Mrs. Dash Onion & Herb Seasoning, plus a sprinkle for the top
- Salt and pepper, to taste
- 12 large eggs
- Hot sauce (optional, to taste)
Instructions
- Preheat your oven to 350°F (175°C). Dice the peppers and onion, and chop the spinach.
- In a large skillet over medium-high heat, drizzle olive oil to coat the bottom. Add the sausage and sauté until fully cooked, about 5-7 minutes. Drain excess fat and set aside.
- Add onion, green, and red bell peppers to the same skillet and cook for about 2-3 minutes until softened. Add chopped spinach and cook for another minute until wilted.
- Return the sausage to the skillet, stir in garlic powder, Mrs. Dash seasoning, salt, and pepper until well combined.
- In a greased 9×13 baking dish, pour the sausage and veggie mix. In a medium bowl, whisk the eggs until frothy and stir in hot sauce if desired. Pour the egg mixture over the sausage and veggies.
- Sprinkle a touch of Mrs. Dash on top and bake for 25-30 minutes or until the egg is set and a knife comes out clean from the center. Allow to cool for 5-10 minutes before slicing.
Notes
Prepped ahead of time, this casserole can be stored in the refrigerator before baking for busy mornings. Leftovers can be stored for up to 4-5 days.
