Description

A hearty and delicious Whole30 Breakfast Casserole featuring vibrant vegetables, fluffy eggs, and flavorful sausage, perfect for a cozy family gathering.


Ingredients

  • 1 pound Whole30 approved breakfast sausage (or turkey sausage if not Whole30)
  • Olive oil for the pan
  • 1 white or yellow onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 cups fresh spinach, chopped (or 16 ounces frozen, thawed and drained)
  • ½ teaspoon garlic powder
  • 1 teaspoon salt-free Mrs. Dash Onion & Herb Seasoning, plus a sprinkle for the top
  • Salt and pepper, to taste
  • 12 large eggs
  • Hot sauce (optional, to taste)

Instructions

  1. Preheat your oven to 350°F (175°C). Dice the peppers and onion, and chop the spinach.
  2. In a large skillet over medium-high heat, drizzle olive oil to coat the bottom. Add the sausage and sauté until fully cooked, about 5-7 minutes. Drain excess fat and set aside.
  3. Add onion, green, and red bell peppers to the same skillet and cook for about 2-3 minutes until softened. Add chopped spinach and cook for another minute until wilted.
  4. Return the sausage to the skillet, stir in garlic powder, Mrs. Dash seasoning, salt, and pepper until well combined.
  5. In a greased 9×13 baking dish, pour the sausage and veggie mix. In a medium bowl, whisk the eggs until frothy and stir in hot sauce if desired. Pour the egg mixture over the sausage and veggies.
  6. Sprinkle a touch of Mrs. Dash on top and bake for 25-30 minutes or until the egg is set and a knife comes out clean from the center. Allow to cool for 5-10 minutes before slicing.

Notes

Prepped ahead of time, this casserole can be stored in the refrigerator before baking for busy mornings. Leftovers can be stored for up to 4-5 days.
