Ingredients

- 1 cup hummus
- 1/2 cup tahini
- Lemon juice
- Water to thin the tahini sauce
Instructions
- Prepare the Chickpeas: Drain and rinse soaked dried chickpeas or canned chickpeas.
- Blend the Ingredients: In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, salt, and pepper; pulse until a coarse mixture forms.
- Shape and Cook the Falafel: Shape mixture into small balls or patties and fry them in hot oil until golden brown, about 3-4 minutes per side.
- Make the Tahini Dressing: In a bowl, whisk together tahini, lemon juice, and enough water for desired consistency; adjust seasoning with salt or lemon.
- Assemble Your Bowl: Layer mixed vegetables, crispy falafel, hummus, and drizzle with tahini dressing.
Notes
For a healthier option, bake falafel at 375°F (190°C) for 20-25 minutes, flipping halfway through.
