Description

A simple and delicious family favorite, this Farmer’s Casserole combines creamy cheese with fluffy eggs and tender potatoes, perfect for breakfast or brunch.


Ingredients

  • 3 cups frozen hash brown potatoes (thawed)
  • 1 cup cooked chicken or beef (diced)
  • ½ cup green onions (sliced – about 4)
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 ½ cups evaporated milk (1 can)
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • ¼ teaspoon dried mustard (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 2-quart baking dish.
  2. Spread the thawed hash brown potatoes evenly across the bottom of the prepared dish. Sprinkle the diced chicken or beef over the potatoes, followed by the sliced green onions and a layer of shredded cheddar cheese.
  3. In a medium bowl, whisk together the eggs, evaporated milk, black pepper, salt, and dried mustard (if using). Pour this mixture over the potato and chicken mixture in the baking dish.
  4. Bake in the preheated oven until a knife inserted into the center comes out clean and the top is golden brown, about 30-40 minutes. Allow to rest for 5-10 minutes before serving.

Notes

Letting the casserole rest allows it to set and makes serving easier. You can customize with different proteins or vegetables for variety.
