- 2 lbs beef chuck or brisket
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, quartered
- 4 cloves garlic
- 3 cups beef broth
- 2 bay leaves
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Corn tortillas
- Oaxacan cheese or any melting cheese
- Lime wedges
- Chopped cilantro and onions for garnish
Instructions
- Toast the dried guajillo and ancho chiles in a dry skillet over medium heat for a few minutes until fragrant, then soak them in hot water for 10-15 minutes.
- Blend the softened chiles, quartered onion, garlic, 2 cups of beef broth, cumin, oregano, salt, and pepper until smooth.
- In a large pot, combine the beef, bay leaves, and the blended sauce. Pour in the remaining beef broth, bring to a boil, then reduce heat and simmer for 2-3 hours.
- Remove the beef, shred it with forks, and strain the broth.
- Heat oil in a skillet, fill corn tortillas with shredded beef and cheese, fold, and fry until crispy on both sides.
- Serve with consomé, lime wedges, and garnish with chopped cilantro and onions.
Notes
Feel free to customize by swapping beef for chicken or using vegetables for a lighter option. Marinating the beef in the sauce for deeper flavor is recommended.
