Ingredients

  • 2 lbs beef chuck or brisket
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, quartered
  • 4 cloves garlic
  • 3 cups beef broth
  • 2 bay leaves
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Oaxacan cheese or any melting cheese
  • Lime wedges
  • Chopped cilantro and onions for garnish

Instructions

  1. Toast the dried guajillo and ancho chiles in a dry skillet over medium heat for a few minutes until fragrant, then soak them in hot water for 10-15 minutes.
  2. Blend the softened chiles, quartered onion, garlic, 2 cups of beef broth, cumin, oregano, salt, and pepper until smooth.
  3. In a large pot, combine the beef, bay leaves, and the blended sauce. Pour in the remaining beef broth, bring to a boil, then reduce heat and simmer for 2-3 hours.
  4. Remove the beef, shred it with forks, and strain the broth.
  5. Heat oil in a skillet, fill corn tortillas with shredded beef and cheese, fold, and fry until crispy on both sides.
  6. Serve with consomé, lime wedges, and garnish with chopped cilantro and onions.

Notes

Feel free to customize by swapping beef for chicken or using vegetables for a lighter option. Marinating the beef in the sauce for deeper flavor is recommended.
