- 1 cup creamy peanut butter
- 1 cup granulated sugar (plus extra for rolling)
- 1 large egg
- 1 teaspoon baking soda
- 1/2 cup chocolate-covered almonds
- Parchment paper for baking
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, add peanut butter, granulated sugar, egg, and baking soda. Mix until smooth.
- Scoop tablespoon-sized portions, roll them into balls, and roll each ball in granulated sugar.
- Place the sugared dough balls on the baking sheet, leaving space for spreading.
- Bake for 10-12 minutes, then gently press a chocolate-covered almond into the center of each cookie while they’re still warm.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For crunch, substitute creamy peanut butter with crunchy. Store cookies in an airtight container for up to one week.
