Ingredients

  • 1 cup granulated sugar (plus extra for rolling)
  • 1 large egg
  • 1 teaspoon baking soda
  • 1/2 cup chocolate-covered almonds
  • Parchment paper for baking

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, add peanut butter, granulated sugar, egg, and baking soda. Mix until smooth.
  3. Scoop tablespoon-sized portions, roll them into balls, and roll each ball in granulated sugar.
  4. Place the sugared dough balls on the baking sheet, leaving space for spreading.
  5. Bake for 10-12 minutes, then gently press a chocolate-covered almond into the center of each cookie while they’re still warm.
  6. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For crunch, substitute creamy peanut butter with crunchy. Store cookies in an airtight container for up to one week.
