Description
Easy and flavorful tortilla roll-ups filled with roast beef and provolone cheese, served with a delicious au jus for dipping.

- 4 large flour tortillas (about 12 inches in diameter)
- 8 slices provolone cheese, thinly sliced
- 12 ounces deli roast beef, freshly sliced
- 1 cup French fried onions, store-bought or homemade
- 2 tablespoons extra virgin olive oil
- 1 can (10.5 ounces) beef consommé
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 2 teaspoons low sodium soy sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Lay a tortilla flat, place 2 slices of provolone cheese over half, then add 3 ounces of roast beef and a handful of French fried onions.
- Brush the inner edge of the tortilla with olive oil, roll tightly, and seal the edge. Place seam-side down on the baking sheet.
- Brush the tops and sides with olive oil, then bake for 8–10 minutes until golden and bubbling.
- In a saucepan, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder. Simmer for 3–4 minutes.
- Let roll-ups rest for 2 minutes, slice, and serve with warm au jus for dipping.
Notes
Customize by trying different cheeses or add herbs to the au jus for extra flavor.
