Ingredients
2 lbs beef short ribs
4 large onions, thinly sliced
4 cloves garlic, minced
6 cups beef broth
1 cup apple juice
2 tablespoons olive oil
1 tablespoon thyme
Salt and pepper to taste
French bread, sliced
Gruyère cheese, shredded
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add sliced onions and cook until caramelized (about 30 minutes), stirring occasionally.
3. Add garlic and cook for another minute.
4. Season short ribs with salt and pepper, then add to the pot and brown on all sides.
5. Pour in apple juice, scraping the pot to deglaze.
6. Add beef broth and thyme, then bring to a boil.
7. Reduce heat to low and simmer for 2 hours, until ribs are tender.
8. Preheat oven to broil.
9. Remove ribs, shred meat, and discard bones.
10. Return shredded meat to the soup.
11. Ladle soup into bowls, top with French bread slices and Gruyère cheese.
12. Broil until cheese is melted and bubbly. Serve hot!

Store leftovers in the fridge up to 3 days or freeze up to 2 months.
