  • 1/2 cup panko breadcrumbs
  • 2 tablespoons olive oil (for frying)
  • 8 oz rotini pasta
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese (for sauce)
  • Optional: chopped parsley for garnish

Instructions

  1. Season the chicken pieces with salt, black pepper, paprika, and garlic powder in a large bowl.
  2. In another bowl, combine the grated parmesan cheese and panko breadcrumbs. Mix to ensure the cheese evenly coats the breadcrumbs.
  3. Coat each chicken piece with the breadcrumb mixture, pressing gently to help it adhere.
  4. Heat olive oil in a large skillet over medium heat. Fry the chicken bites in batches for 3–4 minutes on each side until golden brown and cooked through.
  5. Transfer the crispy chicken bites to a plate lined with paper towels to absorb excess oil.
  6. Bring a pot of salted water to a boil and cook rotini pasta according to package instructions. Drain and set aside.
  7. In the same skillet, melt butter, sauté minced garlic for 30 seconds, then pour in heavy cream and bring to a gentle simmer.
  8. Stir in 1/2 cup parmesan cheese until melted and smooth, then season to taste.
  9. Add cooked rotini pasta to the skillet and toss in the creamy sauce.
  10. Plate the creamy rotini and top with crispy chicken bites, garnishing with chopped parsley if desired.
