Ingredients

  • 1 lb ground chicken
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the diced onion until soft and fragrant, about 5 minutes. Set aside to cool slightly.
  3. In a large bowl, combine the ground chicken, sautéed onion, garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan. Mix gently until just combined.
  4. Transfer the mixture to a greased baking dish and shape into a loaf. Sprinkle the remaining Parmesan over the top.
  5. Bake for 45 to 50 minutes, until the internal temperature reaches 165°F (74°C). Let rest for 10 minutes before slicing.

Notes

Sautéing the onion adds sweetness. Avoid compacting the mixture tightly. Adjust garlic levels to taste.
