- 1 lb ground chicken
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 large eggs
- 1 medium onion, diced
- 2 tablespoons low sodium soy sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, sauté the diced onion until soft and fragrant, about 5 minutes. Set aside to cool slightly.
- In a large bowl, combine the ground chicken, sautéed onion, garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan. Mix gently until just combined.
- Transfer the mixture to a greased baking dish and shape into a loaf. Sprinkle the remaining Parmesan over the top.
- Bake for 45 to 50 minutes, until the internal temperature reaches 165°F (74°C). Let rest for 10 minutes before slicing.
Notes
Sautéing the onion adds sweetness. Avoid compacting the mixture tightly. Adjust garlic levels to taste.
